Ultimate Fish Fry

Crispy Crunchy Fish and Chips
From Sandra Lee at Food Network
3 cups canola oil
2 cups all purpose flour, plus 1/2 cup for dredging
2 teaspoons baking powder
2 cups seltzer water (I used club soda, its all I could find and worked great)
4 talapia fillets
In a medium pot heat 3 cups canola oil to 360 degrees.
In a large bowl combine dry ingredients, except dredging flour, and season with salt and pepper. Wisk in seltzer water. Place remaining 1/2 cup flour on a plate and season with salt and pepper. Dredge the fillet in the flour, shake off excess, then dip into batter. Carefully place the battered fish into the hot oil. Working in batches so not to crowd the pot, fry for 6 minutes until golden brown. Remove to an oven proof plate lined with paper towels. Place in 250 degree oven while other fillets cook.
Serve with malt vinegar.
This recipe is on foodnetwork.com I do not like the chips she makes with this and Jason hated the Tarter Sauce recipe with this one. But the fish was wonderful, it tasted like tempura. Best ever! Look at the cute faces, can't you tell!

Recipes for Me



Whenever I try a new recipe, I ask the family if they like it or not. If it is good, they will say "Put it on the list." This mystery "list" is something I started years ago in a notebook hoping to have a supply of great recipes at a moments notice. That notebook has found a new home long ago and I still want to have a great list of recipes to pull from when the mind is slow. I have recently been asked to contribute to a couple of recipe blogs, and I plan too. I just don't know how glad they will be if I add too many. So this is mine. I will put on recipes I love and that work for my family. Hopefully this will save me losing great recipes and be a resource for who ever is interested. Maybe making a digital "list" will get me organized. I have boxes, notebooks, and dog eared magazines to sort through. But, I hope this will be worth it in the end.


My other plan is to have a place to store pictures of cakes I have made. I love baking and I take pictures of cakes hoping to remember the best. Unfortunatley my picture taking skill is somewhat limited, so I'll take advise there. I only wish I could store a sample of some of these. That would make a much more interesting blog. So get ready to have your mouth water.....


This is the cake I did for Julie's Wedding. The top and bottom are inside out german chocolate cake. The middle cake wad white chocolate cake with raspberry mousse filling and a white chocolate ganache icing.
